Vineyard: The fruit for this wine is wholly sourced from a small parcel at Škalce. Due to the conditions of the growing seasons the vines naturally cropped at a tiny one kilogram per plant, meaning intense and strong varietal characters in the fruit.
Winemaking:The fruit was hand sorted in the vineyard and then again in the winery to ensure only the cleanest and highest quality fruit was processed. The fruit was gently pressed and settled for 24 hours. The fermentation took place at 14-18 degrees celsius and tasted daily before being stopped when an appropriate acid/sugar balance was reached. The wine was bottled in December 2009.
Winemakers Notes: This wine shows delicate and classic varietal aromas of rose petal, lychee, pears and ginger spice that are intense and pure and delight the senses. The palate reveals similar flavours delivered with a seamless texture and balance. The low acidty combined with a small amount of residual sugar leaves a lasting impression of balance and harmony on the finish. Perfect to drink now, though will continue to reward for the next 3-4 years.
To be served with: This wine will go great with South-east Asian and Indian cuisine. It will also complement pork, ham and duck. A great match for spiced apple deserts and also dried fruits.
