Characteristics:
Alcohol: 13 vol. %, residual sugar : 7,55 g/l, pH 3,12, total acidity: 7,55 g/l
Basic wine: Chardonnay
The harvest begins when the grapes are ripe enough (according to measured parameters and the grapes’ state of health). The grapes are then de-stemmed and pressed. We only use spontaneous stream and first pressing. Must is clarified and then left to slowly ferment at lower temperatures. After approximately 5 months of aging in stainless steel, the wine is bottled and second fermentation is performed. Our sparkling wine is aged on the yeast lees for a period of at least 2 years. Discorgement takes place on a regular basis (according to the market requirements).
Konjiska Penina is dry (remnant of sugar is 7g/L) and has an immensely fresh and fruity bouquet, accompanied by a refreshing palate. Its aroma is succulent and complex; the bubbles are extremely fresh and produce nice sparkling. This sparkling wine has a special character, inherited from Chardonnay as the basic wine, and reflects the characteristics of its geographical position and ground.
