Vineyard: Careful attention to vine health ensured the vines the best opportunity to fulfil the exceptional growing conditions offered in the 2009 season. Timely canopy management, such as lateral removal and attention to flavour development during maturity allowed the opportunity to optimise the ideal varietal flavours. The north facing aspect allows the retention of the natural refreshing acidity that makes Sauvignon so enjoyable, with clean ripe fruit.

Winemaking: The fruit was gently pressed, separated into free run and pressings, cold settled for two days before being racked and vinified separately. Temperature control was used to keep the fermentation at low temperature in order to retain aromatics and flavour. After fermentation the wines remained on yeast lees for several weeks to build mouth feel. The wines where then racked, blended, gently fined with milk and fish products, and filtered before immediate bottling, capturing flavour and freshness. The wine was bottled in late December 2009.

Winemakers Notes: This exciting wine has a nose bursting with typical sauvignon aroma of fresh citrus lime and exotic herbaceous grassy tones, underlined with hints of ripe passion fruit and tropical fruits. The palate is lively and vibrant, with refreshing herbal notes and great mid palate weight. The intense flavours are complemented by a crisp juicy acidity, finishing with fantastic intensity and length. Best enjoyed within the next 1-2 years.

To be served with: This wine will complement fresh seafood, shellfish and white fish, as well as tangy food. Garlic or citrus sauces will enhance the power of this wine.
