Vineyard: The fruit for this wine is sourced from Križničevo parcel at Škalce. The fruit was harvested earlier than any of the other Riesling in order to retain the crisp, fresh acidity required to balance the wine. The fruit was hand harvested, being sorted in the vineyard by the pickers and the again in the winery.
Winemaking: The fruit was gently pressed cold and settled for 24 hours at 8 degrees celsius, before being racked to stainless steel. The fermentation took place at between 13-14 degrees celsius. The fermentation was constantly tasted and stopped at just the right time with a great sugar acid balance achieved. The wine was then racked, lightly fined and bottled in early January 2010.
Winemakers Notes: An elegant wine bursting with flavours of citrus and green apples with a delicate honeysuckle note. Made in a Spatlese style the natural residual sugar is balanced by firm acidity. This wine can be enjoyed now but will reward careful cellaring.
