Vineyard:
Winemaking: Fruit was cooled to 8°C and gently pressed to retain aromatics and freshness. Extended maceration of the free run juice with the grapes was avoided to reduce the extraction of excessive colour. After settling for two days the wine was racked and inoculated, fermentation took place at 15 degrees. When the fermentation was complete the wine was held on yeast lees for several weeks to add volume to the mid palate. The wine was then racked, stabilised, filtered and bottled.
Winemakers Notes: Salmon pink in colour, the nose consists of a delicate bouquet of fresh rose petals, confectionary and cream. Fresh acidity is balanced by a round, elegant palate and a lingering finish. A dry style perfect for warm summer days. Perfect to drink now and will be at its best over the next 1-2 years.
